RASPBERRY-HIBISCUS LOAF CAKE

This loaf cake recipe was created as a tribute to my standing Starbucks treat-yo’self-at-3-p.m. order: venti iced passion tea lemonade, unsweetened, with a slice of lemon loaf. With this recipe, I’ve combined the flavors of that standing order to create an aromatic cake perfect for nibbling with a cup of tea or slicing up for brunch. Buy freeze-dried raspberry powder or make your own by using a rolling pin to smash freeze-dried raspberries in a zip-top bag.

CAKE

1 cup whole milk

2 Tazo passion tea bags (or your favorite brand of hibiscus tea)

1/4 cup freeze-dried raspberry powder

1½ cups cake flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

6 tablespoons vegetable oil

1 cup granulated sugar

3/4 teaspoon pure vanilla extract

2 tablespoons lemon juice

2 large eggs
